Beef Stroganoff

Here is a recipe for Beef Stroganoff. You might think of it as a party meal - and it certainly can be - but it's so easy that you'll find it makes a wonderful dinner just for you! Now, I should tell you that I love to make this recipe with "filet mignon" or tenderloin of beef. When filet is used, the result is melt-in-your-mouth tender. Instead, the more traditional method is to use Top Round Steak - either meat, at its very best and most flavorful - can be found in the Celebrity Foods collection of products. Whether you choose filet mignon or top round, you'll need about a pound and half to serve 4 to 6 people. Slice the meat into thin strips.

The other ingredients are a large onion, about 3/4 pound of sliced mushrooms, some beef broth, tomato paste, and a bottle of "meat glaze" such as Bovril - found in the soup aisle. At the end of cooking, you'll add a cup of sour cream and some dill - dried or fresh.

Start out by browning the beef strips in a little bit of butter - then set the meat aside. In the pan, sauté the chopped onion in butter over medium-low heat until it is soft, then add the mushrooms. When they have cooked for two or three minutes, add a good teaspoon of the Bovril or meat glaze, and two teaspoons of tomato paste.

To make the sauce, you'll need a cup of beef broth. Into about a third of the broth, stir 2 or 3 tablespoons of flour until smooth. Add the flour mixture and the remaining beef broth to the onion mixture and stir over medium heat until the sauce begins to boil. Now, if you are using top round, add the meat at this point and simmer very slowly until the meat is tender.

If you are using filet mignon, simply add the meat (no need to simmer). Then add a cup of sour cream - stirring it, a little at a time, into the center of the mixture over low heat. Sprinkle with dill and you're ready to serve.

Beef Stroganoff is traditionally served over buttered wide egg noodles - but some folks like it over rice. Your choice - either way, I'll bet you just love it!
