Jim-Baba Curry

Jim-Baba Curry
Here's what you will need:
  · 1 lb. Chicken Breast Cubes (or Ground Beef or Ground Turkey Meat)
  · Chopped Garlic
  · Chopped Fresh Ginger
  · 4-6 tbsp. Personal Curry Mixture (as you like) (or prepared Curry Powder)
» Cumin, Cinnamon, Ginger, Nutmeg, Chili Powder, Turmeric,
Fennel, Coriander, Cloves, Salt and Pepper.
  · 2 tbsp. Tomato Paste
  · 1 cup water
  · 2-3 cups frozen vegetables
» Try Celebrity Calfornia Blend, or Peas and Carrots, or Chopped Spinach

Sauté chopped garlic and ginger in heavy skillet. Add meat and curry mixture. Stir over medium heat until nearly done, about five minutes. Add water and two tablespoons tomato paste and cover for fifteen minutes. Uncover pot and add frozen vegetables and simmer, covered, for another five minutes. Don't overcook the vegetables---just cook until their color comes up.

Serve the curry accompanied by steamed rice (basmati or jasmine are nice) and sour cream or yogurt with a Chopped Cucumber Salad.

Cucumber Salad
Here's what you will need
  · 1 Cucumber
  · 1/2 tsp. sugar
  · 1/2 tsp. salt
  · 1/2 tsp. fresh dill, basil, cilantro, chives or tarragon
  · 1/2 tsp. lemon juice

Instructions:
Use a peeled seedless cucumber or scoop seeds from medium peeled cucumber. Cut lengthwise, then dice cucumber into small crescents. Combine with 1/2 tsp. sugar, 1/2 tsp. salt, 1/2 tsp. fresh green herb (dill, basil, cilantro, chives or tarragon), and 1/2 tsp. lemon juice. Toss and refrigerate.
