Pepper Rubbed Chuck Steak Salad (Serves 2)
Pepper Rubbed Chuck Steak
Here's what you will need:
· 1 pkg. Celebrity Chuck Roast Filet Steaks (2 6 oz. steaks)
· 1 teaspoon black peppercorns (whole)
· 1 teaspoon pink peppercorns (whole)
· 1 teaspoon green peppercorns (whole)
· 1/2 teaspoon salt
· 1 teaspoon garlic powder
Combine whole spices in coffee grinder or spice grinder and blend
into powder. Coat frozen steaks with spice powder and allow to absorb flavors for at
least 15 minutes or keep coated steaks covered in plastic wrap overnight in refrigerator.
Grill or broil to desired doneness. Allow steaks to rest after cooking for at least 10
minutes before cutting. Best served medium rare with some pink in middle sliced about 1/4
inch against grain.
Pepper-Rubbed Chuck Steak Salad
Here's what you will need:
· Salad greens for 2 persons
· 1/4 pound blue cheese, cut into 1 inch cubes
· 12 walnut halves, crumbled
· 8 cherry tomatoes, halved
Toss greens with blue cheese, walnuts, cherry tomatoes and
Steak Salad Vinaigrette. Top with sliced Pepper-Rubbed Chuck Steak.
Steak Salad Vinaigrette
Here's what you will need:
· 2 tablespoons red wine vinegar
· 1 teaspoon Dijon mustard
· 1 shallot, minced
· 1/2 cup walnut oil or olive oil
· Salt and Pepper to taste
Combine red wine vinegar, Dijon mustard, minced shallot,
and salt and pepper. Slowly whisk in oil until vinaigrette is completely blended.
