Fried Rice with Lamb and Sweet Peppers (Serves 4-6)
Here's what you will need:
· 1/2 small onion, diced
· 3 1/2 cups cold, cooked long-grained rice
· 1 cup sweet red and green peppers, diced
· 1/2 cup leftover lamb, diced
· 1 green onion, diced
· 2 tbsp. soy sauce
· 1 tsp. salt
· Peanut oil or light vegetable oil for stir-frying
· 1 egg, beaten
Cut up all vegetables and leftover meats to the same diced size. Add 1 teaspoon oil to heavy
skillet over high heat and fry onion, meat and individual vegetables one item at a time on high heat for 30 seconds
and set aside together in a serving bowl. Add about 2 tablespoons oil to skillet, then add cold cooked rice, stirring
constantly until it is heated through and slightly browned. Add beaten egg, and cooked vegetables and meat, back
into skillet or wok. The egg will cook once it is added to the cooked ingredients and heated in the wok. Add green
onion, salt and soy sauce and mix thoroughly until all ingredients are heated through. Return to the serving bowl and serve.
