Teen Taco Buffet

Carne Asada Tacos served with Lime Cabbage Slaw,
Salsa, Pinto Beans

Carne Asada Tacos (Serves 4-6)
For the Marinade, Here's what you'll need:
  · Juice of 1/2 lemon or lime · 1 tsp. sugar
  · 1 tsp. salt · 1 tsp. ground coriander
  · 1 tsp. pepper · 1/2 tsp. cumin
  · 1/2 tsp Chipotle or cayenne powder · 1/2 tsp. garlic powder
  · 1 (1 lb.) pkg. Celebrity Carne Asada · Tortillas

Marinate frozen steaks for at least 15 minutes with all marinade ingredients, or marinate up to 24 hours in refrigerator, tightly wrapped. Steaks will quickly defrost quickly. Sear steaks for no longer than one minute on each side on grill or hot dry skillet. Cut meat into long thin strips for tacos.

Salsa
Here's what you will need:
  · 4 large tomatoes, diced
  · 1 large onion, diced
  · 1 bunch cilantro, minced
  · 1 hot green Serrano or jalapeño chile, minced
  · Juice of 1/2 lemon or lime
  · 1 tsp. salt

Combine all ingredients well and let stand for at least 15 minutes. May be refrigerated for up to 3 days.

Lime Cabbage Slaw
Here's what you will need:
  · 2 cups green cabbage, sliced thin, julienne-style
  · Juice of 1 lime
  · 5 green onions, minced
  · 1 bunch cilatro, chopped
  · 1 tsp. salt

Finely shred cabbage and mix with finely chopped green onions and cilantro. Add lime juice and salt, and allow to stand for at least 15 minutes for flavors to mingle. Use instead of lettuce on carne asada tacos.

Meal Accompaniments: Grated Cheese, Sour Cream, Avocado Slices, Chopped Tomatoes, Radish Slices, Lime Wedges, and Bottle Hot Sauce.
