Roast Mini-Chateaubriand (Serves 2-4)
Here's what you will need:
· 1 pkg. Celebrity Mini-Chateaubriand Seasoned
Filet Roast (about 11 oz.)
Roast frozen "Mini-Chateau" on baking pan at 375 degrees F for about 8 minutes, then turn for another five minutes until desired temperature is reached.
Delicious served medium-rare.
Baked Potato and Fennel Gratin (Serves 3-4 as a side dish)
Here's what you will need:
· 1 medium potato, peeled and sliced in thin rounds
· 2 fennel bulbs, stalks and bottom removed, sliced in thin rounds
· 1 cup heavy cream or 'half and half'
· 2 tbsp. butter
· 2 tbsp. grated parmesan cheese
· Pinch of nutmeg
· Salt and Pepper to taste
Butter a small baking dish. Peel and slice potato into very thin rounds. Remove stalks and feathery leaves from fennel bulbs. (You may reserve licorice-flavor leaves to add flavor to another dish, like soup or stew.) Slice fennel into very thin rounds. (It's okay if the rounds fall apart a bit,) Place potato and fennel rounds in buttered baking dish a layer at a time, sprinkling with salt and pepper as you go. Pour cream over the potatoes and fennel in the baking dish. Make sure the vegetables are completely covered with liquid. If not, add a little more. Top the gratin with salt, pepper, dots of butter and grated Parmesan cheese. Bake in a 325 degree F oven for about 45 minutes until top is lightly browned and bubbly.
