Shrimp Scampi (Serves 8) Here's what you will need: · 1 box Celebrity Shrimp Scampi (about 2 1/2 lbs.)
Follow package directions to either broil, microwave, or bake shrimp as desired.
Lemon Rice (Serves 8) Here's what you will need: · 3 cups long grain rice
· 1 tsp. turmeric · 6 cups chicken broth
· Peeled rind of 1 lemon · 1 tbsp. olive oil or vegetable oil
· 1 onion, chopped · 1 tsp. salt
· 2 cloves garlic · Juice of 1 lemon
· 1/4 bag Celebrity Frozen Green Peas (about 1/2 lb.) · 1 tsp. fennel seed
Place all ingredients except rice and oil with 1 cup of the broth in the blender and puree until finely blended. Heat oil on medium high in skillet. Add rice and continuously stir over medium high heat for about five minutes until slightly toasted. Add ingredients of blender and remaining chicken broth. Bring to boil, then reduce heat to low simmer and cover. Cook for about twenty minutes until done, then add frozen peas and re-cover. Remove from heat. The heat from the rice will continue to cook the peas until they are cooked through. Do not overcook peas or they will become mushy.
