Spicy Marinated Feta Cheese
Spicy Marinated Feta Cheese Here's what you will need:
  · 1 large brick feta cheese (about 3/4 lb.)
(you may substitute any soft white cheese)
  · 1 cup good quality extra virgin olive oil
  · 1 to 3 hot red peppers (cut into 2 or 3 pieces)
  · 2 or 3 cloves garlic, chopped
  · Peel of 1 lemon, chopped in 4 or 5 pieces
  · 1 cup fresh herbs, finely chopped
(use parsley, dill, rosemary, basil, sage, thyme,
cilantro or any combination thereof)
  · Salt to taste

Place hot pepper and garlic in sauté pan with olive oil. Heat for 2 to 3 minutes until garlic sizzles, but do not allow garlic or peppers to brown. Add lemon peep and cook for another minute. Remove from heat. Add finely chopped herbs and salt. Pour over cheese in covered dish. Refrigerate overnight or up to one week. Serve with crackers or thinly sliced baguette.
