Grilled Lemon Pepper Chicken

Grilled Lemon Pepper Chicken (Serves 4)
Here's what you'll need:
  • 1 pkg. Celebrity Lemon Pepper Chicken Filets (4 4-oz. filets)

Heat Celebrity Platinum Grill Pan to medium high. Place frozen filets in pan and reduce heat to low. Cover pan and cook for 8-10 minutes until filets release easily from pan. Turn filets to brown on other side. Cover pan again and cook for another five minutes or until filets are cooked through. Let meat rest at least ten minutes before cutting.

Thyme-Roasted Potatoes (Serves 4)
Here's what you will need:
  • 4 medium potatoes, cubed
  • 1 Tbsp. olive oil
  • 1 Tbsp. fresh thyme leaves (may substitute other fresh or
dried herb)
  • Salt and pepper, to taste

Heat oil in covered skillet. Cook potatoes on medium heat in oil for about five minutes until lightly browned. Add salt, pepper, and thyme and toss to coat potatoes. Reduce heat to very low and cover pot. Occasionally stir the potatoes to encourage even browning and re-cover. Continue to cook on low heat for about 15-20 minutes until potatoes are cooked through.

Grilled Lemon Pepper Chicken with Asparagus and Thyme-Roasted Potatoes Simple Garlic Asparagus (Serves 4)
Here's what you will need:
  • 1 bunch asparagus, stalks trimmed
  • 1 tsp. salt
  • 2 cloves garlic, finely sliced
  • 1 Tbsp. water
  • 1 tsp. olive oil
  • (Optional: 1 tsp. lemon juice)

Add oil to covered skillet and heat to medium high. (To use less oil, spray the pan with a non-stick spray or misted olive oil). Add garlic and cook for one minute, then add asparagus and salt. Gently toss asparagus in pan a couple of times, but be careful not to break the stalks. Add water and cover the pan and reduce heat to low. Cook for another 3-5 minutes until asparagus are bright in color and slightly tender. Do not overcook! Remove from heat and leave partially covered until ready to eat. Sprinkle with lemon juice, if desired.
