Roasted Fennel and Orange-Brined Fryer (Serves 4)
Here's what you'll need:
• 1 Celebrity Whole Fryer (3 1/2 to 3/4 lbs.)
• 3 quarts water
• 1 to 1 1/2 cups salt
• 1 to 1 1/2 cups sugar
• 2 Tbsp. orange juice
• 2 tsp. fennel seeds
• 2 tsp. ground cumin
• 2 cloves minced garlic
Combine all ingredients except fryer to make brine. Place brine and frozen fryer in large pot or zip lock bag and place overnight in the refrigerator. (Kitchen Hint: Don't leave the bird in the brine more than 24 hours. If you're delayed in cooking it, remove it from the brine and let it air dry in the refrigerator.)
When you're ready to cook your fryer, preheat the oven to 500 degrees. Place the whole fryer on a roasting pan, breast side down, and roast for 20 minutes. Then turn the chicken over and baste with juices. Turn the heat down to 325 degrees and continue to roast until a meat thermometer reads at least 175 degrees at the thickest part of the inside of the thigh. Let the chicken rest at least ten minutes before carving. Serve pan juices with the carved meat and mashed potatoes.
Celebrity Mashed Potatoes
Remove enough pre-seasoned potatoes from bag for four persons. Heat on very low in covered saucepan until heated through.
Celebrity Broccoli Spears
Remove enough broccoli spears from package for four persons. Heat on medium high with about 1/4 cup water until water boils. Reduce heat to very low and cover for four minutes. Serve immediately or remove cover so that broccoli will not over cook.
