Three Cheese Fusilli with Leeks, Thyme, and Sage (Serves 8-10)
Here's what you'll need:
• 1 lb. Celebrity Fusilli
• 2 leeks, sliced thin
(white to pale green parts only)
• 1/2 stick plus 2 tablespoons butter
• 1 teaspoon nutmeg
• 1 teaspoon cayenne pepper
• 1/2 teaspoon salt
• 2 tablespoons fresh or dried sage, minced
• 2 tablespoons fresh or dried thyme, minced
• 1/2 cup cream
• 3 cups whole milk
• 1/2 cup flour
• 1 lb. sharp white cheddar, grated
• 8 oz. medium sharp yellow cheddar, grated
• 8 oz. pecorino cheese, grated
Cook fusilli in salted boiling water until nearly done, but still slightly raw in the center (about 6-7 minutes). Drain and rinse in cold water. Sauté leeks over medium heat with 2 tablespoons of the butter until soft and golden. Add remaining butter, nutmeg, cayenne, salt, half of the sage, and half of the thyme and stir until melted. Stir in cream. Add flour and stir until smooth. Slowly stir in milk until mixture is of even consistency. Remove from heat and stir in all but 1 cup of the pecorino and all but 1/2 cup of the white cheddar until smooth. Stir in fusilli and coat with mixture. Pour into casserole dish and sprinkle with remaining cheese and herbs. Cook at 400 degrees in center of oven until bubbling and golden.
Green Beans with Bacon & Shallots (Serves 8-10)
Here's what you'll need
• 1 pkg. Celebrity frozen green beans
• 3 slices Celebrity bacon, chopped thin
• 3 large shallots, sliced thin
• zest of 1 lemon
• juice of one half lemon
Cook bacon in skillet over medium heat. Gently lift bacon pieces out of skillet, reserving the fat. Add shallots and sauté until slightly caramelized, between 5-6 minutes, while stirring gently. Add frozen beans and sauté for and additional 5-7 minutes. Toss in bacon pieces and season with salt and pepper, then sprinkle with lemon zest and juice and serve.
