Pork Chops with Tomatillo Applesauce
Pork Chops with Tomatillo Applesauce Here's what you'll need:
  • 1 package Celebrity Pork Chops
(4 chops - Center Cut, Boneless or Loin Cut)
(1 pound to 1.5 pounds)
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 cloves garlic, minced
  • 1 shallot, minced
  • 1 serrano chile, minced
  • 1 teaspoon fresh or dried oregano
  • 1 tablespoon sugar
  • 1 tablespoon apple cider vinegar
  • 2 12-oz. cans tomatillos, drained or
8-10 medium tomatillos, husks removed, chopped
  • 2 golden delicious apples, cored and chopped
  • Salt and pepper to taste

To prepare the applesauce: stir oil, garlic, shallot, serrano chile, and oregano over medium heat until shallot is softened. Stir in sugar, vinegar, tomatillos and apples and continue to stir, uncovered, until apples soften and liquid begins to evaporate. Mash apples and tomatillos with wooden spoon and cover for 2-3 minutes. Uncover, stir, and serve warm over cooked pork chops.

To cook pork chops: season pork chops with cumin and salt. Pan-fry in a lightly-oiled skillet over medium-high heat on each side until cooked. (Kitchen Hint: If you are using the larger center cut chops, you may sear them briefly, then place them in an oven-proof skillet in middle rack and bake them uncovered at 425 until fully cooked, between 10-15 minutes.)

Oven-Roasted Cayenne Baby Potatoes (Serves 4)
Here's what you'll need:
  • 2 pounds baby potatoes, scrubbed
  • 1/4 cup olive oil
  • Salt, pepper and cayenne to taste

Toss potatoes in oil and season with salt, pepper and cayenne. Place in casserole in middle of oven and roast at 450 until skins are papery and golden brown and insides are soft and creamy, about 25 minutes.
