Grilled Curried Leg of Lamb

Grilled Curried Leg of Lamb (Serves 6-8)
Grilled Curried Leg of Lamb Here's what you'll need:
  • 1 Celebrity Boneless Leg of Lamb
(about 3.25 - 3.5 lbs.)
  • 1 onion, chopped
  • 3 cloves garlic
  • 3 slices fresh ginger
  • 1/4 cup lemon juice
  • 1/2 cup olive oil

Spice Mixture
Here's what you'll need:
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cayenne or red pepper
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground nutmeg

Combine all ingredients (except lamb) in blender. Marinate lamb in mixture overnight or at least 8 hours. First sear meat on hot grill, then grill over medium fire on both sides about 10 minutes each side until meat thermometer at center reaches 130 for rare, 140 for medium, and 150 for well done. Let meat rest, lightly covered with foil, at least ten minutes before carving.

Serve with basmati rice, sautéed spinach, and mango chutney or pickle.

Mint Yogurt Sauce (Serves 6-8)
Here's what you will need:
  • 2-3 cups yogurt, strained
  • 1 cucumber, peeled, de-seed if necessary, and finely diced
  • 1 clove garlic, finely minced
  • 1/4 cup fresh mint leaves, finely chopped
  • 1/2 teaspoon lemon juice
  • salt and pepper to taste

Strain yogurt over bowl in cheesecloth-lined sieve for at least 3 hours, covered in plastic wrap in refrigerator. Discard liquid. Combine yogurt and remaining ingredients. Serve with grilled lamb or beef.
