Broiled Halibut (Serves 4) Here's what you'll need:
• 1 pkg. Celebrity Halibut Steaks
• olive oil
• salt and pepper
• 1/4 cup white wine
Spray or rub frozen steaks with olive oil and lightly salt and pepper. Place steaks in shallow baking dish and add ¼ cup dry white wine. Broil until done (about 25 minutes.) Serve with Red Basil Pesto..
Red Basil Pesto (Serves 6-8) Here's what you will need:
• 1 cup extra virgin olive oil
• 2 cloves garlic
• 1 teaspoon salt
• 3/4 cup sun-dried tomatoes
• hot water (enough to cover tomatoes)
• 1/2 cup roasted cashews
• 1/2 cup basil leaves
• 2 tablespoons Parmesan cheese
• 1 teaspoon lemon juice

Cover dried tomatoes in hot water for at least 15 minutes. Put olive oil, garlic and salt in food processor or blender and blend until smooth. Add each remaining ingredient one at a time, and blend until smooth. Serve over fish, chicken, or pasta. Store in refrigerator up to one week.
Sweet and Sour Zucchini with Pine Nuts and Golden Raisins (serves 4-6) Here's what you will need:
• 3 medium zucchini, sliced thin
• 1 teaspoon olive oil
• 1 clove garlic, minced
• 1/2 cup golden raisins, softened in hot water
• 1/4 cup water
• 1 teaspoon white vinegar
• 1/4 cup pine nuts
• 1/2 teaspoon salt
Sauté garlic in olive oil over medium high heat for one minute. Add sliced zucchini and continue to sauté until zucchini slices are slightly brown. Add raisins, water, and white vinegar. Cover pan, and turn heat to low for about 10 minutes, until water and vinegar have mostly evaporated. Add pine nuts and salt. Serve at room temperature.
