Pork Prime Rib Roast

with Minted New Potatoes and Baby Spinach Salad

Pork Prime Rib Roast (Serves 6-8)
Pork Prime Rib Here's what you'll need:
  • 1 pkg. Celebrity Marinated Pork Prime Rib
(about 3.5 lbs.)

Pre-heat oven to 425° F. Place frozen marinated roast in ovenproof roaster and cook for 15 minutes, then reduce heat to 375° F. Continue to cook roast for 1 to 1 1/2 hours, until meat thermometer reaches 140° F inserted into center of roast for medium rare or 150° for medium. Let roast rest, loosely covered in aluminum foil, for at least ten minutes before carving.

Minted New Potatoes (Serves 6-8)
Here's what you'll need:
  • 3 1/2 lbs. new baby potatoes, scrubbed but not peeled
  • 1/2 cup chopped fresh mint
  • 3 tablespoons butter
  • salt and pepper

Cook potatoes in boiling salted water for about twenty minutes until fork easily pierces to center. Do not overcook. Toss hot potatoes in butter, chopped mint, salt and pepper and serve warm.

Baby Spinach Salad with Gruyere Cheese, Pears and Walnuts with Sherry Vinaigrette (Serves 6-8)
Here's what you'll need:
  • 6-8 cups baby spinach leaves, washed and gently dried
  • 1 cup shredded Gruyere cheese
  • 2 ripe pears, thinly sliced
  • 1 cup crushed walnuts

Gently compose ingredients on chilled salad plates. Drizzle with Sherry vinaigrette.

Sherry Vinaigrette
Here's what you'll need:
  • 1/3 cup Sherry vinegar
  • 1 teaspoon sugar
  • 1 teaspoon Dijon mustard
  • 1 shallot, finely minced
  • 2/3 cup walnut oil
  • salt and pepper

Mix Sherry vinegar, sugar, Dijon mustard and minced shallot in small bowl. Slowly whisk in walnut oil. Add salt and pepper to taste.
