Baked Orange Roughy with
Chutney Butter

Baked Orange Roughy with Chutney Butter (Serves 2-4)
Here's what you'll need:
  • 1 pkg. Celebrity Orange Roughy Fillets (2 5-7oz. fillets, about .75lbs.)
  • 1 cup dry white wine (may substitute water or fish stock)
  • salt and pepper to taste

Place frozen fillets in ovenproof dish. Pour wine over fillets, then salt and pepper fillets to taste. Place in 375 degree oven for about 15 minutes. Check for doneness at 12-minute mark. Do not overcook--fish will continue to cook after it is removed from oven. Serve warm with a teaspoon or so of Chutney Butter for each fillet.

Chutney Butter
Here's what you'll need:
  • 4 tablespoons butter, softened
  • 1/4 cup bottled Indian chutney
  • 1 teaspoon curry powder

Blend softened butter with chutney and curry powder in mini-processor or use fork to blend smoothly. Keeps for up to two weeks in refrigerator. Serve with fish or broiled chicken.
