Caramelized Onion, Bacon & Broccoli Spirali
Here's what you'll need:
• 6 slices Celebrity Bacon, cooked and crumbled
• 3-4 large white onions, thinly sliced
• 1 tablespoon butter
• 1 teaspoon sugar
• 1 tablespoon olive oil
• 3 cloves garlic, minced
• 1 large can whole Italian plum tomatoes, 14-16 oz.
• 1-2 cups broccoli, chopped
• 1 1/2 cups water
• 1/2 cup red wine
• 1/2 teaspoon cayenne
• 1 teaspoon oregano
• 1 teaspoon rosemary
• 1 bay leaf
• salt and pepper to taste
• Parmesan cheese, grated
• chopped parsley for garnish
• 1 lb. bag Celebrity Spirali
For the Celebrity Spirali:
Bring at least six quarts salted water to boil. About ten minutes prior to finishing sauce, cook Celebrity Spirali in water, then drain and serve with sauce.
For the sauce:
Chop Celebrity bacon into 1-inch pieces and cook until done. Drain and set aside. Sauté onions in the butter with a little salt over medium low heat for about 20 minutes. Turn up the heat and sprinkle sugar over the onions, stirring constantly until onions turn medium brown and have lost most of their moisture. Remove from heat and set aside. In another pan, sauté garlic in olive oil for one minute, then add canned tomatoes, water, red wine, cayenne, oregano, rosemary, bay leaf and salt and pepper. Bring to boil, then reduce to simmer, stirring occasionally. After about 30 minutes, add chopped broccoli and cook for an additional 3 minutes until cooked through. Add caramelized onions and cooked bacon and stir until heated through. Pour over cooked pasta. Garnish with parsley and freshly grated Parmesan cheese.
